PB Breakfast Oatmeal

Our current breakfast go to is quickly going to be this recipe. I first heard of baked oatmeal on pinterest and then my SIL Cary told me about her recipe! I like it because it's quite basic and you can easily switch out the peanut butter for something else ie. almond butter, hazlenut butter mmmm nutella would be good- ooh what would happen if I used fruit preserves instead of the peanut butter??? Hmmm be watching for some other spins!

PB Breakfast Oatmeal
3 cups oatmeal
1/2 cup brown sugar
1cup milk
2tbsp butter
2tsp baking powder
3/4 tsp salt
2tsp vanilla
1/2 cup peanut butter

Mix all dry ingredients first. Then add the rest and stir well. Spread in a glass baking dish or scoop into cupcake liners for quick servings. Over at 350 degrees. Bake for 20-30 minutes. Enjoy! I love this stuff!!

Easy Butter Chicken (CrockPot)

4 skinless, boneless chicken breasts
1 onion, halved and thinly sliced
1 Tbsp. grated fresh ginger
4 garlic cloves, crushed
1 Tbsp. chili powder
2 tsp. curry paste or powder
a pinch of cinnamon
1 28 oz. can diced tomatoes, undrained
2 Tbsp. tomato paste (optional)
1-2 tsp. garam masala 
1 cup plain greek yogurt
1/2 cup(ish) half & half or whipping cream
salt and pepper to taste
steamed brown basmati rice, for serving

Method: Place everything but the yogurt, cream, salt and pepper into the CrockPot, cover and cook on low for 4-6 hours. Uncover, stir in the yogurt and cream, season to taste with salt and pepper, and serve hot over rice mixed with green peas.

Lasagna Soup

BEST SOUP OF 2012!!!

I found this recipe Here, and whipped up a batch yesterday for dinner with my sweet inlaw's who had our girls sleep over and then drove a whole hour to bring them home! I LOVE loovvee this soup! YOU will not be sorry!

for the soup:

2 tsp. olive oil
1-1/2 lbs. Italian sausage 
3 c. chopped onions 
4 garlic cloves, minced 
2 tsp. dried oregano 
1/2 tsp. crushed red pepper flakes 
2 T. tomato paste 
1 28-oz. can fire roasted diced tomatoes 
2 bay leaves 
6 c. chicken stock 
8 oz. mafalda or fusilli pasta (we used radiatore since that was what I had on hand) 
1/2 c. finely chopped fresh basil leaves 
salt and freshly ground black pepper, to taste

for the cheesy yum:
8 oz. ricotta 
1/2 c. grated Parmesan cheese 
1/4 tsp. salt 
pinch of freshly ground pepper

2 c. shredded mozzarella cheese
Method: Heat olive oil in a large pot over medium heat. Add sausage, breaking up into bite sized pieces, and brown for about 5 minutes. Add onions and cook until softened, about 6 minutes. Add garlic, oregano, and red pepper flakes. Cook for 1 minute. Add tomato paste and stir well to incorporate. Cook for 3 to 4 minutes, or until the tomato paste turns a rusty brown color.

Add diced tomatoes, bay leaves, and chicken stock. Stir to combine. Bring to a boil and then reduce heat and simmer for 30 minutes. Add uncooked pasta and cook until al dente. Do not over cook or let soup simmer for a long period of time at this point, as the pasta will get mushy and absorb all the soup broth. You may even want to consider cooking the noodles separately, and then adding some to individual bowls before ladling the soup over them. This would be an especially smart move if you are anticipating any leftovers. Right before serving, stir in the basil and season to taste with salt and freshly ground black pepper.

While the pasta is cooking, prepare the cheesy yum. In a small bowl, combine the ricotta, Parmesan, salt, and pepper.

To serve, place a dollop of the cheesy yum in each soup bowl, sprinkle some of the mozzarella on top and ladle the hot soup over the cheese.

Chicken & Blueberry Salad

This recipe reminds me a lot of the  Zupa's salad that I love! I would eat it every night if my kids and husband would let me get away with making the same meal every night! :)

Chicken & Blueberry Salad2 servings spring mix lettuce mix
1¾ cup pulled cooked chicken meat
2 each Granny Smith apple diced
½ cup blue cheese
1 cup blueberries fresh
 cup almonds sliced & glazed or toasted

¾ cup pure maple syrup
1 tsp sea salt
½ cup rice vinegar
1 cup olive oil, extra virgin
1½ tsp ground mustard

Dressing: Place all ingredients into a blender and mix on high for 1 minute/ Serve at room temperature
Salad Place the salad mix on a plate or in a bowl, sprinkle the rest of the ingredients over the top of the salad. Drizzle the dressing over the entire salad, ENJOY!

Orange Cupcakes

Orange Cupcakes

1 ¾ cup cake flour
½ teaspoon salt
2 ½ teaspoons baking powder
1 cup sugar
2 large eggs (room temp., or closeto it.)
1 teaspoon vanilla extract
½ cup orange juice (fresh squeeze) 
1 tsp Orange zest1 stick of butter, softened

Preheat oven to 350 degrees.
Combine flour, salt, and baking powder in a bowl. Set aside.
In a separate bowl combine butter and sugar then cream until fluffy.  Add eggs one at a time, orange zest and vanilla, Mix together thoroughly.
Add dry ingredients to creamed ingredients, 1/3 at a time alternating with adding portions of the orange juice to the creamed mixture.
Place cupcake liners into tins. Fill cupcake liners, until ½ full.
Bake for 15 minutes or until a toothpick inserted into center comes out clean.
Cool cupcakes completely before frosting with Cream Cheese Icing. Garnish with a small pinch of orange zest.

Homemade Granola Bars

I've been looking for a new granola bar recipe for quite a while and these take the cake! My girls were praising me up one side and down the other tonight after I made these! They are so yummy! There are ton's of ways to further healthify these, I've listed a few in parentheses next to the ingredients list. Next time I make them I'm going to sneak in some dried fruits! I adapted my recipe from Here

Homemade Granola Bars

1/2 c. honey or corn syrup {I used 1/4 c. of each} 
1/2 c. brown sugar 
1/2 c. peanut butter (or other nut butter like almond butter)
3 cups old fashioned rolled oats
1 cup rice krispy type cereal 
1/4 c. ground flax seed 
1 or 2 T. wheat germ {optional — and I did not add this}
1 c. total of your favorite mix-ins {I used chocolate chips and coconut, but you could also mix and match dried fruit, nuts, seeds, etc.}

In a small sauce pan, mix honey {and/or corn syrup} and brown sugar.
Cook over medium-high heat until sugar is completely dissolved -- stirring constantly.
Remove from heat and quickly stir in peanut butter.
Mix the oats, cereal, flax seed, and optional wheat germ in a large bowl.
Pour honey mixture over dry ingredients -- mix well.
Stir in ch0colate chips, nuts, fruit, and any other "mix-in" you would like to use
Press mixture into a 9" x 13" pan that has been greased or lined with wax paper.
Let cool and "firm up" --  kind of like Rice Krispy Bars
Cut into bars and store in a air-tight container.

Chocolate Chip Cheesecake Dip

Just in time to tempt your new year's goal willpower--- I made this for a luncheon  after the baby blessing of some of our very close friends (who happen to also be family) and it was a big hit!

Chocolate Chip Cheesecake Dip
1 package (8oz) cream cheese, softened
1/2 cup butter, softened
3/4 cup confectioners' sugar
2 tablespoons brown sugar
1 teaspoon pure vanilla extract
1 cup miniature semisweet chocolate chips
Graham cracker sticks and animal crackers for dipping

In a small bowl, beat cream cheese and butter until light and fluffy.
Add the sugars and vanilla; beat until smooth. Stir in chocolate
chips. Serve with graham cracker sticks. Yield: 2 cups.
