No-Bake Chocolate Fudge Cookie Bars


These rich, chewy No-Bake Chocolate Fudge Cookie Bars are the perfect quick treat when you’re craving something sweet but don’t want to turn on the oven. Made with cocoa, oats, coconut, walnuts, and gooey marshmallows, they're extra creamy thanks to evaporated milk. Quick to make and irresistibly fudgy!

Ingredients

2 cups white sugar

½ cup butter

½ cup canned evaporated milk

6 tablespoons unsweetened cocoa powder

1 teaspoon vanilla extract

3 cups rolled oats

½ cup chopped walnuts

½ cup flaked coconut

2 cups mini marshmallows


Method

1. In a large saucepan over medium heat, combine the sugar, butter, and evaporated milk. Bring the mixture to a boil and let it boil for 2 minutes, stirring occasionally. Remove from heat.

2. Stir in the cocoa powder and vanilla extract until smooth and well combined.

3. Add the rolled oats, chopped walnuts, and flaked coconut. Mix until everything is evenly coated.

4. Gently fold in the mini marshmallows while the mixture is still warm, but not hot enough to completely melt them.

5. Drop the mixture by tablespoonfuls onto waxed paper or spread onto a parchment-lined baking sheet.

6. Let cool at room temperature for at least 30 minutes, or until fully set.
