Chocolate Chip Pecan Pie Bars — A Decadent Twist on Classic Pecan Pie!

If you love pecan pie but want something a little easier to slice and share, these Chocolate Chip Pecan Pie Bars are an absolute must-try. They combine a buttery, crumbly crust with a gooey, nutty filling studded with melty chocolate chips. Perfect for potlucks, holidays, or any time you crave something sweet and comforting!

Ingredients

  • 1 ½ cups all-purpose flour

  • ½ cup (1 stick) cold unsalted butter, chopped into small pieces

  • ¼ cup packed brown sugar

  • 3 large eggs

  • ¾ cup corn syrup (light or dark, your choice!)

  • ¾ cup granulated sugar

  • 2 tablespoons melted butter

  • 1 teaspoon vanilla extract

  • 1 ½ cups chocolate chips

  • 2 cups large pecans, roughly chopped

Method

  1. Preheat your oven to 350°F (175°C). Lightly grease a 13x9-inch baking pan with non-stick spray or butter.

  2. Make the crust: In a food processor (or by hand with a pastry cutter), pulse together the flour, cold butter, and brown sugar until the mixture resembles coarse crumbs and starts to hold together when pressed. Press this mixture firmly and evenly into the bottom of your prepared pan.

  3. Bake the crust: Place the pan in the oven and bake for about 13 minutes, or until the crust is lightly golden around the edges. Remove from oven and set aside.

  4. Prepare the filling: In a large bowl, whisk together the eggs, corn syrup, granulated sugar, melted butter, and vanilla extract until smooth.

  5. Add nuts and chocolate: Stir in the chopped pecans and chocolate chips until evenly combined.

  6. Assemble and bake: Pour the filling over the warm crust, spreading it evenly. Bake for 25-30 minutes, or until the filling is set and golden brown on top.

  7. Cool and serve: Let the bars cool completely on a wire rack. Once cooled, cut into squares and enjoy!

Tips & Variations

  • For extra gooey bars, underbake by a minute or two. They’ll firm up as they cool.

  • Swap out pecans for walnuts if you prefer.

  • Sprinkle a pinch of flaky sea salt on top before baking for a sweet-salty twist.

These bars keep well at room temperature for a few days, or in the fridge for up to a week — though they rarely last that long!
