Baked Oatmeal

 

Simple BAKED OATMEAL


3 Cups (300g) Old fashioned rolled oats
1/2 cup (106g) Packed brown sugar
1 1/2 tsp baking powder
3/4 tsp salt
1 1/2 cup dairy or plant based milk
2 large eggs
2 tsp vanilla extract
6 Tbsp (85g) melted butter or oil
Opt 1/4cup maple syrup
Toppings for serving: additional milk, sliced bananas, berries, coconut, chopped nuts, etc.


Method
 
1. Oven to 350 degrees F

2. Lightly grease a 9X13-inch baking pan or line with parchment. Set aside.

3. In a large bowl, add the oats, brown sugar, baking powder, and salt. Stir to combine.

4. In another bowl or liquid measuring cup, whisk together the milk, opt: maple syrup, eggs, vanilla, and butter or oil.

5. Add the wet ingredients to the oats mixture and stir to combine.

6. Pour the mixture into the prepared pan. Cover and refrigerate until ready to bake (up to 24 hours) or bake right away.

7. Bake uncovered for 25-30 minutes until the edges are lightly golden and the oatmeal is set. Serve warm with additional toppings.
