Eggnog Puffy Oven Pancake (German Pancake with a twist)

Eggnog Puffy Oven Pancake (A Festive Twist on a Classic)

If you’ve ever had a German pancake (also called a Dutch Baby), you know it’s one of the simplest yet most impressive breakfasts you can make. Light, airy, and golden brown, it puffs up in the oven and deflates into tender folds of deliciousness.

This holiday season, I decided to give the classic a little twist — by swapping some of the milk for creamy, spiced eggnog. The result? A rich, subtly sweet pancake with hints of nutmeg and holiday cheer in every bite. It’s perfect for Christmas morning, New Year’s brunch, or honestly… any chilly weekend when you want something special without spending hours in the kitchen.

Eggnog Puffy Oven Pancake Recipe

Serves: 4–6
Prep Time: 5 minutes
Cook Time: 15–20 minutes

Ingredients

  • 6 large eggs

  • 1 cup all-purpose flour

  • 2/3 cup eggnog

  • 1/3 cup milk

  • 1/2 teaspoon salt

  • 1/4 cup butter, melted

Optional for serving: powdered sugar, maple syrup, whipped cream, cinnamon, or fresh berries

Instructions

  1. Preheat the oven to 425°F (220°C). Place a 9x13-inch baking dish or large ovenproof skillet in the oven while it heats — this helps the pancake puff up nicely.

  2. Make the batter: In a medium mixing bowl, whisk together the eggs until smooth. Add the flour, eggnog, milk, and salt, and whisk until the batter is well combined and free of lumps.

  3. Add the butter: Carefully remove the hot pan from the oven. Pour the melted butter into it, swirling to coat the bottom. Immediately pour the batter into the hot pan.

  4. Bake: Place the pan back in the oven and bake for 15–20 minutes, or until the pancake is puffed and golden around the edges.

  5. Serve immediately: The pancake will deflate slightly as it cools — that’s normal! Slice into squares or wedges and top with your favorite toppings.

Tips & Variations

  • For extra spice, add 1/4 teaspoon cinnamon or nutmeg to the batter.

  • Try using flavored eggnogs like vanilla or pumpkin spice for a new twist.

  • This is best enjoyed fresh from the oven, but leftovers can be reheated in the oven or air fryer to bring back some crispiness.
